Sunday Chat: Breakfast for Dinner & Abuelita's Recipes
Some fun things are on the horizon!
Ok….so you probably didn’t even notice, but I totally missed last week’s Sunday Chat. Last week was CRAZY, but it kind of worked out because we were all watching the Super Bowl anyway, right?
Friday was Cody’s birthday, so I spent the day making him Tiramisu (his favorite cake) from SCRATCH (yes, even homemade ladyfingers, which were not as easy as I’d hoped btw and I had to make them twice). And it was the Olympics opener so I was able to watch it live while I was baking!
Then we went out for Italian food with some friends for his surprise dinner, and the next day we had a birthday party for one of our neighbor’s kiddos.
Sunday of course was Super Bowl day and I made Bbq chicken sliders with Hawaiian bread rolls (omg these were so good) plus my Abuelita’s (grandmother in Spanish) Tres Leches Cake recipe.
But let’s talk about talk about that Tres Leches, shall we? Actually, let’s talk about all of her recipes. My grandma is from Nicaragua and she brought over so many recipes with her, but even the few that were written down hardly had real measurements, and the ingredients were confusing since things are so different here in the USA.
SO, I just recently decided to embark on a journey to backwards science all of her recipes and see if I can make things just the way she used to make them. What I’m Making This Week
SUNDAY
Eating at my mother in law’s house this evening, so I’m actually not sure what we’re having. It’s a nice feeling to not be in charge of food every once in a while!
MONDAY
Monday we will be getting in later in the day, so I’m thinking about bringing out the frozen taco soup from last week. Or ordering pizza. Who knows.
TUESDAY
Ok so this is normally my filming day but this week we’re skipping filming! And my goal is to catch up on ALL the leftovers I have in my fridge/freezer from making so many recipes lately. However I am on a baking journey and plan on testing my Abuelita’s Pastellitos de Pina! These are little hand pies with a cinnamon pineapple filling that’s SO good.
WEDNESDAY
I have a whole package of potstickers from Trader Joe’s in my freezer that we need to deal with, so I’m thinking this One-Pan Dumpling Bake recipe.
THURSDAY
I also have a ton of cottage cheese leftover, so a breakfast for dinner situation would be great for everyone. The kids would be SO happy, it’s always their fave! I’m planning on making these Protein Soufflé Pancakes.
FRIDAY
Another leftovers day and planning some recipe testing over the weekend for next week. This week is kind of a quiet one in my kitchen, which I will gladly take, but I know next week we will be back into full swing.
