Sunday Chat: Batch Cooking + Shrimp Bowls
January is here and we're talking goals, veggies, protein, and so much more!
Happy January, friends! Ahhh it feels SO good to be in the new year. Setting intentions, establishing goals, taking a breath of fresh air, oh, and eating a few veggies, too.
First things first, you may have noticed that the name of my Sunday emails has changed! What used to be called the “Sunday Plan” is now “Sunday Chat”. Why? Well, because I launched my new Monthly Healthy Dinner Meal Plans and I didn’t want things to get confusing. Plus, these Sunday emails are always super chatty anyway!
But don’t worry, I’ll still be writing out my real-life behind-the-scenes weekly menu in these chats every week. Along with updating you on life lately and more!
Now that January is here, I’m so grateful to slow down a little bit and truly just take a breath. I’m not sure if you guys are feeling this way, but December was such a whirlwind for me and it felt like we were sprinting to the end of the year.
And, as you can imagine, as a food content creator my fridge and pantry turned into holiday food overload chaos in those last couple of weeks! So now that we’ve finally worked through all of that it feels really good to reset everything. More veggies, more protein, more balance, moving my body again, and gave my pantry a good cleaning.
I’m so excited for so many great things this month and would love to hear your goals/thoughts for the new year!

What I’m Making This Week
SUNDAY
One of my favorite life hacks is to make a larger meal on Sundays and double certain components to make other weeknight dinners quicker and easier. This Sunday I’m making a big batch of my Honey Sesame Chicken Bowls with double rice, double chicken, and even double the sauce!
MONDAY
I’m testing out Garlic Shrimp Bowls that I’m PRETTY excited about. Using the rice from yesterday’s recipe to save time!

TUESDAY
Filming day! Sushi cups (using more leftover ingredients), Banana Chocolate Muffins, and a Dumpling Bake. This going to be a good day :) Dinner will be out since my kid’s school has a fundraiser that night!
WEDNESDAY
Leftovers!! At this point I will have so much food in my fridge it shall not be wasted.
THURSDAY
Something that’s been on my mind for this year is really learning how to my Abuelita’s (grandma) recipes from Nicaragua. While they don’t fall into the “healthy + high-protein” niche, I would love to really get these recipes down and share them with my family plus the world! So I think I’ll test one on this night. Stay tuned.
FRIDAY
Date night with the hubs ❤️ We have tons of gift cards to a pizza place, so pizza it is!
